North Indian cuisine
The North Indian cuisine, especially the Mogul, is the most famous Indian cuisine in the western world. Characteristic features are a high use of dairy products such as yogurt or ghee and a relatively high proportion of meat dishes, mostly goats or lamb meat. The Oriental influence is due to the use of nuts, as well as spices such as cumin and saffron. Typical dishes are the tandoor, a clay oven, where not only Naan and Chapati, but also the famous Tandoori chicken are prepared. A further specialty are the Samosas also spread in Pakistan, varied and aromatic filled pasta. Most dishes are more discreetly keen and have a softer consistency resulting from long cooking times.
